You've heard the phrase, "When the going gets tough, the tough get going." Originally said by John F. Kennedy's father, it's been used by singer Billy Ocean and thousands of managers. Here is the simple translation: Take positive action.

When business is slow, instead of the "oh, woe is me" doom-and-gloom attitude, make a new plan and put it into action. Below is a list of free or inexpensive ideas for battling the slow economy blues.

Hand Out Business Cards - Business cards are still one of the least expensive and most effective means of advertising. It says exactly who you are, what you do and how to contact you. When you hand one of your cards to someone it's an opportunity to engage in conversation, let that person give you their business card, and maybe start a relationship. You never know who you might meet or how you both might benefit from the meeting. Cross promote with a suitable, non-competitor and ask them to display your cards at their front counter.

Kick The Slow Economy Blues

Meet New People - Your local newspaper has a calendar of weekly meetings and events. There are hundreds of online resources to find new networking and social groups, such as Meetup.com. Can't find a club that you want to join? Start one of your own. With the right topic, someone will be interested in joining.

Expand Geographically - It could be a portion of your city, a different part of the state, across state lines or even into Canada, Mexico or across the ocean. If territories are already established, find a section no one is covering and take it over, adjoining or not. Do a cost analysis of expanding delivery areas. An office supply company could widen its delivery boundaries by a mile and still maintain quality service without the need to raise delivery rates.

Maintain Existing Relationships - Talk to your customers and clients. Foster a stronger relationship with them and remind them you're still around. Keep in mind they are also in the same slow period as you. You don't need to make a sales pitch when you engage them; just a friendly 'hello' to stay in contact. Of course, there's nothing wrong with asking for business or even offering some incentive to encourage them to make a purchase. Always ask for a referral.

Reestablish Lost Contacts - Stuck somewhere in a filing cabinet or collecting electronic dust in your computer is at least one person you haven't contacted in six months (or longer). Send an email, make a call, mail a handwritten note...take time to reengage this person. You might find someone new has taken his/her place giving you a new sales opportunity. Find all the customers who haven't placed an order in the normal sales cycle. Open a discussion to find the reason why they haven't purchased.

Find Competitors' Customers - Your competition could be wringing their hands worrying about their business instead of tending to their customers' needs. Their customers might be LOOKING for a reason to change vendors. Now is your opportunity to make contact. A slow economy is a terrific time to capture market share, which is the reason savvy business owners increase marketing efforts.

Cold Calling - Oh, that evil act of picking up the telephone and calling strangers. :::gasp::: Aside from the extra regulations imposed by the Telephone Consumer Protection Act (1991), the telephone call is an inexpensive means of creating sales. Don't like asking for business on the phone? Make the conversation "warm" instead of "cold" by asking prospects to take part in a telephone survey. Naturally, your survey questions will be pertinent to helping you and your company. (If you would like a sample of an effective telephone survey script, contact the author).

Door Knocking - This might be more dreadful than cold calling. Now, you have to talk to strangers who can SEE you! :::gasp::: Use the survey approach if you're more comfortable. Offer to leave collateral material. Ask for his/her business card or contact information. Remember, door knocking is simply another form of lead generation.

Email Blast - Send everyone in your database an electronic message. It's free or very inexpensive. If you don't have the technology or know the legalities of mass email distribution, there are several companies that offer inexpensive email service. Need to find new contacts? Some email distribution services sell contact lists. You might consider purchasing a list from a data acquisition company.

Appreciate Your Employees - Now is the time to nurture a stronger relationship with your employees, more so than when things are good. In a slow economy, too many managers believe it's okay to be abusive because employees want to keep their jobs. If you know a manager like that, tell him/her to prepare for a mass exodus of staff once the economy improves. An annual pay increase might not be as big as anticipated or even possible, so take the time to explain the reason to the employee expecting one. An offer of a merit increase at a later date when things have improved might be a solution. Giving praise, privately or publicly, still makes a positive impact on attitude and work performance. Ask your staff for ways to improve sales. They'll feel involved, have more confidence in their job security, and could surprise you with ideas. When you're positive your staff will be positive and customers will feel that.

Expand Your Work Force - The more people you have searching for business the greater your chances of finding new business. This may not work with hourly employees, such as restaurant servers, unless they door hang flyers for you. Find people who are more likely to do whatever it takes to generate sales. Consider hiring part time sales people if your business structure allows.

Reorganize - Is every part of your office, your business, your building clean and up to date? No old files collecting dust? Any bank boxes stuck in some closet? Is the copy room arranged neatly? Any stacks of magazines waiting for you to read them? How stuffed is your credenza with books, papers, and trinkets from tradeshows? Is your contact database current? Could the break room pass a health inspection? Is there a better filing system you wanted to try? What about a fresh coat of paint on the walls for new, clean feeling? Get the idea? Restructuring provides a purpose to generate positive energy that you and your staff will feel.

Volunteer - Put your hands to work helping someone else and take your mind off the fact that you have more time on your hands due to slow business. Physical labor can be therapeutic and lessening someone else's burden is rewarding.

Exercise - It's very easy to arrive home after a lackluster day, microwave some processed frozen food, and lump yourself on the sofa in front of the television. Get your body busy! Go for a walk, ride your bike, go to a park for a pick-up game, dance with your partner (or alone) in the living room, just do some activity that will energize your body. The chemicals released by an active body will make you feel better physically and mentally.

Go to Church/Meditate - Faith is the focus of your internal energies to clarify what you hold true to yourself. Whether it is a higher being, your set of values, your family or your dreams, it is your center of power generated by positive concentration on what is important to you. It strips away all external distractions. Tai Chi and yoga really work for some people. Not sure how to do it? Join a class or borrow a DVD from the public library. Try it. With genuine effort you will feel more alive.

Learn Something New - Make time to study a topic that will help you professionally, personally or both. Taking a class, or self-paced instruction, challenges your mind to think and grow with the input of new information. There are free classes offered at your local library and online. Even if it's simply reading a book, challenge yourself.

Teach Something - You have skills, talent and knowledge that others want. Make a list of the parts of your career where you're most comfortable and that's a good place to start. Think of teaching a favorite hobby. Still not sure what to teach? Try helping someone learn to read.

Spend Time with Family and Friends - How many times were you too busy to spend relaxing time with family and visiting with friends? Enjoy your home life. That's the reason you've worked hard. Also, allow your family and friends to help you stay upbeat ("A burden shared is a burden lessened"). Decompressing in this manner will take away that panicky feeling we all have had when things are tough.

Some items on this list are simple. Some might seem too fanciful. You have two choices: Try a few with the hope of getting good results, or you could mope around all day with a guarantee of getting nothing.

Picture yourself fishing: Do you want to put one baited hook in the water or drop as many as possible? The more actions you attempt the greater your chance of catching something.

Stay focused, stay productive and stay positive. The economy will improve soon and this is your opportunity to be positioned for the next wave of prosperity.

Welcome to Reader Views Margaret. It is a real pleasure to have you talking to us about your discoveries that a major cause of ill health and stress is caused by an external diet.

Irene: The title of your book depicts a question we would never think of asking ourselves - "Is Your House Making You Overweight, Sick or Tired?" Wow, why ask this question?

Margaret: First, Irene, I would like to thank you for this interview. I welcome the opportunity to share this life-saving information with you and your readers.

Interview with Margaret Shontz, author of "Is Your House Making You Overweight, Sick or Tired?

One should ask himself if his house is making him overweight, sick or tired because maybe it is. Ours
was, and as we look back, our previous house was also.

Twenty-five years ago, each one of my family members was overweight, sick or tired. I thought the
cause must be related to what we were or were not eating so I started studying nutrition. I threw out
all of the health destroyers in my kitchen and had only raw apples left! I changed our internal diet, and
we were better for five years. Then we started having excess sodium symptoms, so for another two
years I studied the nutritional literature trying to discover the source of the excess sodium. Then one
day while taking a shower, I noticed I was swelling up. That was it! There was 40# of salt affecting
our bath water and house air-that was the source of our excess sodium! Two years earlier, we had
remodeled our bathroom and added a water softener to keep the new fixtures mineral-free. That is
what was giving us the excess sodium symptoms!

As I went into other homes and public buildings, I became aware of other symptoms often matching
the later-learned symptoms of the residents. This is one reason why internal diets do not work for
very long and cravings surface; the external diet is affecting the body's balance of internal body
chemistry. Also, if the external body is being pulled outward, one must consume a lot of food to keep
the internal body an equal distance.

Irene: What all do you cover in your book?

Margaret: I cover over 125 possible household problems that might be causing the residents to be
overweight, sick or tired. I include the effects of many "invisible" stressors from a metal headboard to
dryer sheets to some types of furnace filters to gas leaks to improper electricity and many more
stressors.

Irene: What inspired you to write this book?

Margaret: As I mentioned above, my family and I realized the external diet had a major impact on our
health. I would tell others of our experiences, and they would realize problems in their houses were
also stressing their health. They encouraged me to write the book to help others.

Irene: I had the opportunity to review your book, and after several days of pondering all I could say
is "Wow, really??" What is the biggest "wow" that people find?

Margaret: Without a doubt, the biggest "wow" is the effects of improper electricity.

Electricity is powerful - it can glow, heat, cool, mix, spin, suck, wash, dry, entertain, print words, tell
time, raise the heavy garage door, and much more. Everyone knows if they were to touch an electric
wire, they would probably get electrocuted. It should be no surprise then that being a few inches
away from improper electricity or within improper electricity=s environ can have such a powerful ill
affect on the body!

Irene: You go in-depth to make us realize that improper electricity negatively affects our health.
Please explain to our readers your findings.

Margaret: First, let me explain improper electricity as I use it in my book: Improper electricity is any
electricity that causes stress on the body.

Observation of my body was the first indicator that improper electricity was a problem. I learned of a
voltage detector that beeps and lights up when around voltage; it confirmed my body=s
observations. Later, I reviewed a massive amount of literature on the subject. Twice-nominated
Nobel Peace Prize Robert O. Becker has completed very precise research. In his excellent book Cross
Currents he states, ". . . with any level of voltage, the water within the tissues will be subjected to
electrolysis, a process in which the water molecules are broken apart . . . this produces gases such as
hydrogen, that are extremely toxic to cells . . . the onset of electrolysis . . . occurs at about 1.1 volts."
Even at that very low level of voltage of 1.1 volts, there is a very strong effect on one=s body. This
can be one explanation why some people cannot drink water or eat wet or wetting foods; because
consuming them would add to the body=s fluid volume.

Irene: You refer to our homes as being sick. What are the major culprits that exist in most homes?

Margaret: I believe the most major culprit in homes is, of course, improper electricity. People
believe that just because the light comes on and the refrigerator cools that their electricity is wired
correctly which is not necessarily the case.

Next would be the corrosive rod in a new hot water heater which over time dissolves into the water. I
talked with one lady whose husband had been diagnosed with throat cancer just two months earlier. I
asked her if they had just gotten a new hot water heater. She answered they had gotten a new one just
a couple of months ago!

Salt in household water softeners can have a major influence on a person=s health. Everyone has
heard the warnings about excess salt in the internal diet; those warnings also apply to the absorption of
salt externally from bath water and household air.

Heat sources such as furnaces, radiators, fireplaces, and etc. can have a tremendous effect. I know
of one brand of furnace where not only was it installed incorrectly, but also it was engineered
incorrectly. Finally after ten years, the engineers moved the location of a part=s grounding wire from
the electronics board to the frame of the furnace so after all these years, it now appears to be
engineered correctly.

Split receptacles which use a wall switch to turn on the electricity must not only be wired correctly
but also used correctly. Split receptacles should be outlawed!

Of course, we must also not forget that such things as mercury dental fillings, vaccinations, aluminum
from aluminum cookware and some deodorants, and fluoride toothpaste are also part of our external
diet.

Irene: You do realize that your information is ahead of your time and many people may consider your
information unfounded. What recourse do you take to convince them differently?

Margaret: A medical doctor aware of my research has told me I am fifty years ahead of my time. I
enjoy being a pioneer. The stranger people think it is, the better I like it because it reinforces the
newness and uniqueness of the concept. When observation of your own body leads you to truth, that
is really all that is necessary. Unfortunately, few people take time to observe their senses to connect
how they feel with their external diet. Instead they believe ill health can only be caused by the internal
diet, inherited factors, something that is "going around," or "unknown" reasons that medical
researchers have yet to discover. My research suggests most ill health is not hereditary; instead, it is
houseitary. The engineers and our technicians are our family's health care providers. If they do their
jobs right, we have health; if they do their jobs wrong, we have ill health. They know if someone at
our house is ill, I call them instead of a doctor.

Today many people pop food, pop pop, pop pills (over-the-counter, legal, or illegal drugs), buy this,
buy that, escape to here, escape to there, and etc. just so they can keep going. They do not take time
to notice how they feel when and where. They are so busy that sometimes subtle health problems are
overlooked. So I developed a Health Inventory Checklist to help them. They can use the results of

If your readers will start noticing when and where they feel the best and the worst, sooner or later,
they will begin to see patterns, and it will finally dawn on them their external diet is causing their health
problems.

Your readers may be surprised how they feel if they unplug the little transformers which lower voltage
such as those found on some printers, video games, answering machines, portable phones, and cell
phones. The body operates on its own electricity and must maintain the proper level.

Your readers may be surprised how they feel if they unplug surge protectors which level out
electricity. After all, heartbeats are peaks and valleys; a straight line is death. Readers may also be
surprised how they feel if they eliminate microwave signals, ovens, portable phones, cell phones,
cable/satellite TV--which can make things inflexible. The heart and lungs especially need to be able to
contract and expand. Look at someone's face who uses a cell phone. Frequently, the side of the face
where they place their cell phone while talking is very inflexible and has "old age" lines.

It must be remembered whatever happens to the house, happens to its residents. One lady was
complaining about her adult son having become so lazy; he just would not get going. I explained to
her about improper electricity. She said her son slept in a loft and had recently put his computer
directly below his bed! In today's world, one's behavior is composed of one's true personality
engulfed in stress. It is only when stress is removed that an individual's true personality can appear.
Divorcing spouses will say their spouse has changed. The spouse did not change; instead, stressors,
many of which are invisible, changed the spouse.

Irene: Tell us about all the research that you have done over the past twenty-five years that has given
you the insight of our external diet.

Margaret: I paid attention to how I felt when and where. And I had confidence in my body=s
senses to warn me of dangers. That is the key.

First it was the swelling up from salt in the water softener. When we got a new hot water heater, I
got an "ulcer" feeling in my stomach and an ugly green sore in my throat. Then when the Utilities
surge protector was on our electrical system, I learned about powerful improper electricity. God gave
us our senses to keep us safe; we must pay attention to when we feel bad and correct the situation or
flee from it.

I have interviewed many experts and technicians and have reviewed related literature.

Irene: How do you propose we improve our external diet?

Margaret: First, we must realize it is the external diet that is causing most of our health and stress
problems. For example, if a nail was sticking out of a door frame and family members scraped their
arms on it when walking into the room, it would be obvious not to just keep putting band-aids on the
wounds but to pound the nail back into the door frame. So it is with most of our other ailments; we
just have to find the cause (probably in the external diet) that is causing the problem and eliminate it.
Usually when there is no interference (external or internal), the human body can work just fine.

When the cause of ill health is eliminated, a cure is not needed. I wrote my book as a checklistBhow
to find problems and how to fix them. With this checklist, house problems can be examined, one
problem at a time. Once your readers eliminate a stressor and notice their health has improved, they
will want to finish all the items listed in the book as fast as they can; it feels so good to feel good!

Irene: Are you writing any more books?

Margaret: Yes, I am working on the book which has the same name as my website: Stress-Free
Living at Your Fingertips. It explains how to remove stressors from the internal, external, and spiritual
diets. For it is only when stressors are eliminated that the body can function as it was originally and
wonderfully designed.

Protecting Your Children From Kitchen Hazards

Kitchens are full of all sorts of bright and shiny utensils and equipment that may attract a child's eye, but many of these are also potentially dangerous if used improperly. Children are naturally curious and may try to touch or play with sharp or hot objects in the kitchen that can result in injury. If you have young children around, knowing the hazards that exist and preventative steps to take can help to keep them safe.

Protecting Your Children From Kitchen Hazards

microwaves, stoves, and toasters and anything heated on or in them can be very hot and pose a burn risk. Drawers and cabinet doors can easily trap or smash little fingers that are in the way when they close. Sharp knives or other utensils could accidentally cut or poke a child who doesn't know how to handle them properly. Pots and pans full of boiling water or hot food could spill onto the floor if bumped or knocked over, splashing hot water on anyone nearby. Chemicals under the sink also pose a risk to children because they are often manufactured to be bright colored liquids which may bear a striking resemblance to juice or sport drinks.
Safety Precautions

All of the above hazards can result in injury or illness for children. If you have young kids around the kitchen while you are busy cooking, you may not always be able to keep an eye on them. The following safety precautions can help keep your children safe in the kitchen:

Put child proof locks on all cabinet doors and drawers. This can prevent kids from accessing chemicals or utensils that could harm them. It can also help minimize the risk of smashed fingers. Don't let children climb on kitchen counters, especially while you are preparing food or cooking. Keep sharp objects and utensils out of reach of children. With the hustle-bustle lifestyle of today, families are finding it more and more difficult to get any time together, much less "quality" time. Families with soccer and tennis and two working parents and longer school hours and band and longer commutes and-on-and-on find themselves passing one another in the hall or in the driveway. About the only time that the family members can all get together for a few minutes to catch up on what everyone is doing is in the kitchen for a quick meal.

Since this room winds up being the gathering spot for the family, it would make sense to have it as cheerful and welcoming and as open as possible. Some kitchens that have not been updated in a while, have an image problem-they seem cluttered and dark and un-styled. A total kitchen makeover would be very expensive with new everything--appliances, sink, drapes, flooring, cabinets, lighting, etc. But getting a "new look" doesn't necessarily mean new everything and a big expense.

One of the quickest and least expensive fixes is a new paint job. Choose bright, expansive colors to open up the room. Paint the ceiling a color rather than white to give the perception of more space. Countertops can be refinished if wood. Old, scarred wood countertops can be replaced with granite or marble "look-a-likes" at a reasonable price. Backsplashes can be painted in contrasting colors, which will give the appearance of depth. Or tile pieces can be cemented to the wooden backsplashes to give a totally different look. Maybe a talented family member or a friend of the family could paint murals across the backsplashes to create a point of interest and increase the horizon of the room.

Sometimes kitchens can look crowded because they are. Countertops become a catchall space because they are flat and handy. Open up the look of the room by freeing up some counter space. Old canning jars with wire-top lids filled with unshelled nuts make a homey display. Keep flowers in old pitchers or colored vases on the counters.

Change the window fabrics to bright colors and arrange the rods and valances to allow in outside light. Many kitchen lighting fixtures are old and unattractive and do not effectively illuminate the area. You can exchange the fixtures for brighter, more colorful ones. Use the newer type bulbs that give off more light but use less electricity.

If there are no area rugs in the kitchen currently, the addition of rugs is a great way to update the area. The rugs could be color-matched to the new paint job or printed patterns that have a kitchen theme could be used. Area rugs add class and a modern look to the floor and can add to the impression of a larger space. If area rugs already exist they could be replaced with ones more in keeping with the new look being created. A large rug could be placed under the kitchen table while smaller ones could be used in front of the sink and the cooking area.

A redecorating project can be fun and can be a good family activity, something that all members can get involved in. Everybody has a vested interest in improving the "look" of the kitchen-it's where they spend a significant amount of their at-home time and a place where their friends will eventually wind-up for snacks and conversation. The "new look" kitchen will be a source of pride and accomplishment for the whole family and will be something that all members can enjoy for years to come.

Here are ten invaluable kitchen design tips. The measurements are in feet (') and inches ("). If you need to convert the measurements to metric units, please get back to me.

1. Kitchen designers use the term work triangle to describe the busiest part of the kitchen: the space between the sink, refrigerator and cooking top--the space in which most of the cooking preparation is done. Experience says that for maximum efficiency, the maximum length of any one side of the work triangle should be 9' and the minimum length of any one side should be 4'. Some kitchens design the work triangle along outside walls. Some kitchens keep part of the triangle in the center of the kitchen.

2. There should be some counter space on each side of the sink. The ideal combination is 24" on one side and 18" on the other. But these numbers are not sacrosanct. Other numbers work--but it is best to have work space on each side.

3. Cabinets and similar storage space soon get filled in a busy family kitchen. A small kitchen for two people needs at least 13' of cabinets along the floor, 12' of cabinets along the walls and 11' along the countertops. Larger family kitchens vary greatly. Since countertop space is taken up by appliances like microwaves and mixers, do not be skimpy when you design countertop space.

4. The width of aisles depends on the expected number of cooks. If one person does most of the cooking, an aisle of 42" works well. If two people cook, at least 48" are needed. The truth in most cases is the further apart cooks are, the better.

5. There should be shelf space near the refrigerator. A modest amount of shelf space is needed as part of meal preparation. A greater amount of space is needed as part of loading groceries after shopping. Counter space should be placed on the side of the refrigerator where the door opens. Fifteen inches is the minimum needed on this side. If the refrigerator is a side-by-side model, with refrigerator on one side and freezer on the other, place counters on both sides

6. Dishwashers should be placed within a foot or two of the sink. The top of the dishwasher very often serves as the countertop. But the dishwasher countertop is a risky place for permanent storage, since the dishwasher often vibrates. Objects sometimes fall off countertops when they vibrate too fast.

7. Be aware of the direction in which doors open. Obviously open doors should not clash.

8. Ovens or stoves require countertop space nearby. Minimally, a space 15" square is needed. microwaves also require nearby countertop space.

9. Work counters can be of different heights. The height of chopping boards should be comfortable to the standing cook. Some other tasks can be done at other heights, such as the height when the user is seated. And of course if the cook or cooks are shorter or taller than average, accommodation needs to be made.

10. The space above stoves or ovens is extremely important, since there is a fire danger if there is not enough space. Ideally the wall space around open fire should be tile or similar fireproof material. Closets or cabinets above open flame should be at least 24" at a minimum.

Remove from microwave when chocolate is melted and smooth. Dip one strawberry at a time into the melted chocolate, holding the strawberry by the cap and swirling to coat. Place the dipped strawberry on a flat pan lined with parchment paper. Continue dipping strawberries until you have coated as many as desired. Let the semi-sweet chocolate dry on the strawberries before continuing. You may refrigerate the dipped strawberries to speed up the process. When the dipped strawberries are dry, melt white chocolate chips in the microwave in the same manner used for the semi-sweet chocolate. Decorate the semi-sweet chocolate dipped strawberries by piping melted white chocolate in lines back and forth across the top. Let the white chocolate dry before serving. Christmas Cookies - Basic Sugar Cookie Recipe

Sugar cookies are the basics of any holiday. They are versatile and wonderfully delicious. You can do just about anything with sugar cookies including flavoring and a wide variety of decorations that it can take. They can also be sweet or done without the extra sweetness expected of them. The choice of course is up to what you and your family enjoys.

Basic sugar cookie recipes can be found anywhere, in just about every cookbook and can even be found online with relative ease. Because the sugar cookie is such a versatile cookie you can find a number of variations. Children can help out with a number of aspects as well with these.

When using a regular sugar cookie recipe the cookies are usually rolled in sugar before placing them on the cookie tray or sugar is sprinkled over them before baking. This is a wonderful place for children to be able to help out. It is important however to warn children to stay away from the cookies until they cool. Sugar can get very hot, hotter than most substances and children can be easily burned by the sugar coating on these cookies.

Christmas Cookies - Basic Sugar Cookie Recipe

Here is a simple basic sugar cookie recipe to start with variations can be found online or make your own to your families taste. Experimentation can be fun with these for adults and children alike.
Basic Sugar Cookies

Ingredients

1 1/2 c butter
2 C white sugar
4 eggs
1 tsp vanilla extract (this can be changed to almond, mint or even maple depending on taste and variation)
5 C all purpose flour
2 tsp baking powder
1 tsp salt

Instructions

Soften the butter so that it is room temperature and easily to manipulate but do not melt it. Use the Thaw feature on the microwave if necessary but usually leaving it on the counter for a few hours or over night will take care of it for you.

Take a large bowl and combine the sugar and butter until it make a smooth and creamy mixture. Next add in the eggs and the extract, in this case Vanilla. You can add more vanilla if you want depending on taste. Stir in the flour, the salt and the baking powder.

Then cover the dough and chill for at least 1 hour in the refrigerator.

While chilling the dough preheat your over to 400 degrees F. pull the dough from the refrigerator and roll out onto a floured surface. You will want the cookies to be between 1/4 to 1/2" thick. Cut into shapes with any cookie cutter and place on an ungreased sheet about 1" apart or you can form dough balls roll them sugar and flatten. Cooking time increases with cookies more than 1/4 to 1/2" so adjust accordingly. Bake the cookies for about 6-8 minutes. Routine Kitchen Cleaning - Keeping the Heart of the House Healthy

The kitchen may be the most intimidating of all the rooms that you have to conquer, but hopefully these kitchen cleaning hints will help you conquer your beast with ease. The key is to make the kitchen less of a beast to begin with by preventing build up. Here are some preventative measures you should be taking on a daily basis if you don't want to pull your hair out when it comes to weekly cleaning.

Do the dishes.
All snack, meal, or anything-else dishes should be done right after you are finished with them. If you cannot do the dishes immediately, soak them in warm soapy water while they are waiting. They should not stay in this water long enough for it to become cold water.

Cooking dishes (pots, pans, etc) can be done one of two ways: after you cook and before you eat, or soaked while you are eating and the cleaned after you're done eating. I recommend the first option. I love eating knowing that I only have to rinse my plate when I'm done, and not do a bunch of dishes.

Routine Kitchen Cleaning - Keeping the Heart of the House Healthy

If you eat with a family, I encourage figuring out a way to create an assembly line out of post-meal dishes or work together in some other way to get the dishes done.

I prefer a scrub brush with a handle to a sponge. I hate picking up a soggy sponge and it never makes me feel like my dish is really clean. The handle keeps my hand away from the mess and the brush make it easy to see the mess. If you do use a sponge, rinse and ring it out after each use.

Keep the Counters Clear
Wipe down the counters and table after each meal, even if there aren't noticeable spills.

Deal with spills and stains as they happen. A wet spill is much easier to wipe up than a dried one, weeks later. This is especially important on the stovetop, in the microwave, in the fridge, and on the counters.

Put things away when you're done with them. This includes clean dishes, food, small appliances, etc.

Avoid Odors
To avoid odors in the kitchen use baking soda. You can sprinkle some in the bottom of your trashcan(s) and put an open box in your refrigerator. If your microwave is holding smells hostage, consider putting a bowl of baking soda in there whenever it's not being used.

Take out the trash when it's full and when it has spoiled or perishable items in it.

These are small tasks that, when done everyday, take little to no time at all. If you choose not to do these things each day, by the end of the week they will build up into a mess that will take more time than you want to spend on cleaning up the kitchen. Prevent the mess and save your time!

E Coli: How To Protect Yourself

Dear Health-Minded Readers,

Recently in the news we heard of what the World Health Organization called the 'world's largest E.coli outbreak' in Germany, France and other parts of Europe. The outbreak affected mostly bean and seed sprouts, lentils and adzuki beans and there were several fatalities from it.

Fortunately, that particular E.coli outbreak did not affect the United States. However, from time to time, E.coli contaminations of food do break out across the United States, particularly in the warmer weather months. In fact, just last month there was an outbreak of E.coli in hazelnuts that spread across 3 states!

E Coli: How To Protect Yourself

The truth is, you have to be very careful with the hygiene of your food. Many of my patients who have heard the news of these outbreaks have asked me how they could protect themselves against a possible E.coli contamination of their food. It's not difficult and really only takes a little extra effort on your part to make sure you don't become ill from possible E.coli contaminated foods.

Protecting Yourself From E.Coli

E.coli contaminations occur when food comes in contact with feces, either animal or human, somehow. Most often, people associate E.coli contaminations with meat but other foods, like all types of produce, can also become contaminated by exposure to feces somewhere along the processing route. As I tell my patients, learning how to properly store and cook your food is the best hedge against possible unknown E.coli contamination of your food. Here is my advice:

Cook At Proper Heat: Cooking meats, poultry and fish to the proper temperature will kill any possible E.coli bacteria that may be present. Cook all red meat to a temperature of 160 degrees (need a food thermometer). Cook all white meat (poultry like chicken, turkey) and fish to 180 degrees. Watch for undercooked meats in restaurants, be wary ordering rare meats.

Buy Them Last: When grocery shopping, buy your meat, fish and poultry last. Don't put it in your cart and walk around the store while browsing other items to buy. This gives your meat a chance to thaw and bacteria to grow before you leave the store.

Thaw Them Carefully: Do not try to thaw meats at room temperature quickly, especially in warm weather. Let them thaw slowly in the refrigerator on the higher shelves. Or, you can thaw quickly in a microwave if you are going to cook it immediately.

Keep it Cool: Similarly, if you have a long trip home from the grocery store and it's a warm day, you might want to consider having a small portable cooler set up in the backseat or trunk with ice in it where you can put your meat and poultry to keep it frozen on the way home. Also, turn your AC up a little cooler for the ride home.

Food storage: Make sure your refrigerator/freezer is cold enough. Measure the temperature to be sure your refrigerator is 41 degrees as E.coli (and other bacteria) can start growing at 45 degrees. If you plan on eating your meat or poultry later that day or the next morning, be sure to store it on the lower shelves of your refrigerator where it is colder.

Keep Counters Clean: When preparing meat, poultry on your countertop, be sure to wipe your counter clean with a disinfectant wipe and then rinse and let it air dry before preparing raw meat on it. Or, use a large, clean cookie sheet to prepare meat.

Clean Your Produce: Be sure to use a vegetable scrubber and/or produce wash to get rid of any bacterial remnant that may have gotten on produce during processing and/or shipping. You can make your own produce wash by using equal parts clean water and white vinegar, enough to cover your produce completely, and place your fruits and vegetables in the solution for 15 minutes. Scrub the skins of the produce (this is not possible to do with lettuce, and other leafy produce) with a scrubber. Be sure to rinse the produce well before preparing.

Watch Raw Foods: Although many people like to eat their produce raw to retain more vitamin content, this can add to the risk of a possible bacterial contamination. Steaming at a high temperature can help to kill bacteria and not lessen vitamin content.

Wash your hands! Simply washing your own hands with hot water and an antibacterial soap will prevent you from possibly transferring E.coli bacteria to your food.

E. Coli Contamination Symptoms

Now that we've talked about how to protect yourself from an E.coli contamination of your food, you need to know the symptoms of E.coli contamination. Children, and possibly very elderly people, are more likely to get an E.coli infection simply because of difficulty enforcing hygiene especially after toileting. However, anyone, of any age, can get an E.coli infection. Below are some common symptoms:
Stomach cramps and pain. Diarrhea - could start off watery and then become very bloody. Vomiting.

E. coli contamination symptoms usually rid themselves from the body within a few days to a week by drinking plenty of fluids and staying away from heavy foods. However, complications can arise from blood loss and/or dehydration such as kidney damage. Please seek medical attention if your diarrhea/vomiting symptoms are severe and you feel weak, have heart palpitations and do not show signs of improvement after 3 days.

Why didn't I think of that? How many times have we all asked that question? When it comes to humor, funny things happen to us all the time. I think the reason why more people don't have more humor in their lives, is because they don't CAPTURE the incident when it happened! They're always too busy with something else! I can't blame people for that, as we live in a fast-paced society, and forgetting things is common. And, if you have a memory like mine (forget it), you will never, remember the incident the way it happened!

I wrote this article, because I want to show the reader how there is humor all over the place...IF you just look for it!

AROUND THE HOME: Sometimes humor knocks on the front door!

The "Humor Bug", Catch It-and Spread It Around!

A few years ago, I was sick as a dog with a bad cold and flu...and, I was in bed for about a week! The chest congestion I had, was so deep that I lost my voice to a whisper! Coughing all the time, made things worse! The agony lasted for about two weeks.

One day, the doorbell rang, and with nobody around to answer the door, I got up and answered it. There was a young man standing there who was about fourteen years of age and he said:

Newspaper boy: "I'm collecting for the morning newspaper, sir."

And, in a WHISPERING voice I asked, "How much is it?"

In his own WHISPERING voice, the paper boy responded, ".50."

At which time I responded in a WHISPERING voice, "Oh, you don't have to WHISPER, young man, I have a terrible cold and the flu, and I lost my voice!"

Again, the young man responded in a WHISPERING voice, "Whether I WHISPER or not, sir, the bill is still .50!"

Here are two people WHISPERING at the front door, as if we were in a library. During this short exchange with the paper boy, the more I laughed at what was happening, the more painful it was!

IN THE WORK PLACE:

I knew a man and wife, named Kathy and Rick Nelson, who worked at the same company where I worked. They had a baby, and were having trouble coming up with a name that they could both agree on. This tug-of-war between them went on for weeks, and they still couldn't come up with a name for their baby. So, they decided to put a notice up on the blackboard in the break room at work, and to ask fellow-employees for any suggestions they may have for their baby. The following

OUT IN THE STREETS AND AROUND TOWN:

Something that really annoys me, is when I go into a store, through the IN door...there is somebody coming the other way and comes OUT through the IN door! And, when I finish taking care of my business in the store, I proceed OUT the OUT door...only to have somebody come IN the OUT door! I've never been a conformist, so maybe I should change my ways. Next time I go to the store, I should do what everybody else does! Go IN the OUT door and come OUT the IN door!
(People who do this, have what I call, that "ice cream truck mentality," ding-a-ling...ding-a-ling!)

I love this one. One day, I was craving for an ice cream cone, so I went into a fast-food restaurant and ordered one. The young man behind the counter asked me, "Sir, do you want the ice cream cone for HERE...or do you want it to GO?" (Please...Somebody hold me back, before I jump on this kid!)

Most of us have a craving for something at some time or another...Mexican food, pickles; donuts and so forth. One day, I was craving green seedless grapes, and I had to have some NOW, or I was going to go crazy! So, I went to the grocery store and got the grapes. When I went to pay for the grapes, I thought I would have a little fun with the grocery clerk.

The Express line sign reads: "20 items or less." There was nobody around in the express line, so I headed over there to check out, and I asked the clerk, "I have about 248 grapes here, and I'm over the limit, so can you check me out, since there are lines over at the other registers? The clerk looked at me like I needed help! "Yes, I can check you out here, because you only have ONE bundle of grapes...not 248 individual grapes...yes, you do have 248 grapes, sir...but, they are all in one bundle...am I confusing you...or am I confusing ME?" The clerk smiled at the stupidity of it all, but I didn't get the laugh I thought I would get! So, when a person does spontaneous humor (like I do),
you never know what you're going to get. In this case, I didn't get the laugh I wanted, but maybe that's was just "sour grapes" on my part! (pun intended)

Because there are no cabinets in the way, my microwave oven sits on top of the refrigerator. One night after dinner, I was craving for a bowl of ice cream. After I put a couple of scoops in a bowl, I put the ice cream away. The next morning, I got up as usual and prepared for my day. I needed to heat up the breakfast I prepared, so I was going to put it in the microwave...and guess what I saw?

I made a mistake and put the half-gallon of chocolate ice cream in the microwave, instead of the freezer just below the microwave...and now I had to clean up a chocolate mess! (Where were you when the brains were handed out, Jer?)

DECISIONS; DECISIONS: I'm getting tired of making so many decisions during my lifetime! Especially petty decisions, which really irritate me! It seems like everywhere I go, I have to make a decision...and it's getting old!

* I go into a department store to buy a shirt, and go up to the counter to pay for it, and the clerk asks me, "Sir, will this be cash...or charge?" (S-C-R-E-A-M!)

* I go to the pizza joint, and order a pizza and the clerk asks me, "Sir, do you want thick and chewy or thin and crispy?" (S-C-R-E-A-M!)

* I go to the ice cream store to get some ice cream, and the clerk asks me, "Sir, do you want a cup or a cone?" (S-C-R-E-A-M!)

* I go into the grocery store to pick up a few items, and I pay for them and the bag person asks me, "Sir, do you want plastic or paper?" (S-C-R-E-A-M!)

I've been a football fan most of my life and I like to watch a game on occasion. When my wife and I were dating, I asked her if she liked football and if she knew anything about the game. Her answer, "Sure, I know a lot about football." I was a little skeptical, so I gave her a little quiz, and asked her what's a "first down"? Her answer, "A first down is when the first player gets knocked down!" (somebody get me some aspirin!)

Because my computer blew up, I was going to a local community college located near-by to use their computers, until I could replace mine. The computer lab has about 65-70 computers for students and public use. One day, a woman came into the lab, and searched all around the lab to see if there was a computer available. That day, it was a packed house and no computers were available. She asked me what she could do...maybe, get on a waiting list, etc. In my warped and off-the-wall mind, I told her, "Why don't you just yell out... F-I-R-E!" (I couldn't believe she looked at me weird!)

I think the key to getting good, usable ideas is to try to remember them. Whether the ideas are for humor or anything else. I advise people to carry a small spiral notebook, with them at all times, to capture those ideas. Maybe, a Blackberry will help; a strawberry; a cranberry...whatever you want to harvest...is fine with me!

I have a big advantage over others, when it comes to humor, because I've been in it for over forty years, so it's been a long learning period for me. But, everyone has to start someplace, so if you're interested in getting more humor into your life, I encourage you to do so. Good luck!

Looking for a quick, convenient way to reheat leftovers, broil small portions, and toast bread all with one easy appliance? If you don't own, or have never used, a toaster oven, you're missing out on an energy-saving option that can handle many of the cooking tasks you do every day.

A toaster oven is a counter top kitchen appliance that can not only toast bread and bagels, but many can also serve as an alternative to your wall oven. Several models can also roast, broil and bake food. Higher end models even offer options like rotisseries, allowing you to bake a chicken or small turkey. The features have certainly changed over the years, and today's counter top ovens can do nearly everything your traditional oven can.

Counter Microwave

Toaster ovens typically contain two heating elements in the form of metal coils. The coils are located at the top and bottom of the oven, just like your normal oven. Depending on the setting you choose, toasting, broiling or baking, the oven will control the temperature of the heating elements. Counter top ovens normally have a timer built in, as well, and often, the oven will shut off automatically when the timer goes off.

Advantages of Using a Toaster Oven

When looking for a new oven, it's advisable to make sure there are upper and lower heating elements, as you won't be able to do as much with an oven that only has a bottom heating element.

One of the greatest advantages to using a smaller oven is that it is far more energy-efficient than using a traditional oven. Because it uses less energy to heat up, using a counter top oven can save you money on your electric bills in the long run.

Re-heating food is a snap using a toaster oven, and in many cases, it's preferable to using a microwave. Often, food reheated in a microwave will end up being soggy. Take a slice of pizza, for example. In a microwave, your pizza may heat up thoroughly, but you're often left with a soggy or hardened crust. A toaster oven will heat up slices of pizza evenly, leaving the crust nice and crispy.

Another nice advantage to toaster ovens is the space that they save in your kitchen. Rather than having a separate toaster, rotisserie and convection oven, you can have all three in one compact appliance. This is great for people with smaller kitchens, that don't have a lot of extra counter space.

Cleaning a toaster oven is also easier than cleaning a wall oven. Today's ovens mostly have non-stick interiors and a removable crumb tray, to easily dispose of crumbs and food spills.

As with any kitchen appliance, caution needs to be exercised when using it. The exterior of the oven may get hot when it's operating, so using oven mitts is advisable when opening the door and removing food. The appliance should always be unplugged when not in use, and young children should never be allowed to operate it.

Install a Waterline For an Under The Counter Dishwasher

Installing a water line and drain pipe for an under the counter dishwasher is the same for a new dishwasher as it is for an old one. Once the location is chosen and the electrical works are connected, before the electricity is turned back on, install the water line and drain pipe for the dishwasher. Proper placement of water tubes and drain pipes will insure the dishwasher works correctly.

Be sure to have everything you need before starting to install the water line. The items needed are, a shutoff valve, the water line, a tape measure, a hand saw, a piece of copper tubing, a drain tube, a T-fitting, an adjustable wrench, and 4 compression fittings.

Counter Microwave

Before starting any work on the water line, be sure to shut off the water and empty the hot water line. Put a container under the hot water line and cut the line to install the T-fitting.

Install a Waterline For an Under The Counter Dishwasher

Place a compression fitting on each end. Tighten the fittings by hand, and then just a quarter turn with the adjustable wrench.

Attach the shutoff valve to the T-fitting. Secure the water line from the dishwasher to the shutoff valve.

Keep the container under the hot-water supply line. Turn the water back on. Look for leaks in all connections. Carefully tighten the connections a quarter turn at a time, if there is a leak. Once there are no leaks, time to move on to the drain hose.

Install the drain hose by measuring and cutting the drain tube to fit from the dishwasher to the drain. If attaching the drain hose through a garbage disposal, there will be space in the disposal to install a dishwasher drain pipe. If there is not a disposal, a waste T-fitting will need to be installed to attach to the drain.

Be sure to secure all connections before testing. Turn on the water and test again for leaks. If leaks are present, tighten the connections a little more, being careful not to over tighten. One quarter turn at a time, until the leak is stopped. Copper is a soft metal and will bend or break easily.

Once all connections are not leaking, finish installation of the dishwasher and run a test cycle. Check once again for any leaks. Once no leaks are found, installation is successful and finished. Place the dishwasher securely in its place.

If you have one, always refer to the installation manual for manufacturer specific installation.

This happens because the heat lowers the collagen viscosity in these affected muscles. Collagen is a protein, one of the most common in your body. You can find collagen in tendon and ligaments, skin, the covering of your muscles, cartilage and in your bones. By lowering the viscosity in the collagen when you apply heat to an area, the tendons and muscles soften, allowing those muscles to stretch more comfortably and smoothly. Keep the heat on long enough, and your muscles and tendons enter a very relaxed state so that you can move them better and exercise them back into shape. This is what happens also when you use a wheat bag for heat therapy to heal cramps in your muscles, and in countering the painful effects of joint stiffness. Pain is handled well because heat will slow down and reduce the severity and frequency of pain signals sent from the nerves to the brain. So your brain can easily handle the soreness.

On the other side of things, cold has its benefits as well. Setting a cold compress in an area will counter swelling that is a result of enlarged blood vessels. The cold will do the opposite of heat and constrict those vessels. Cold therapy will numb the injured region and lower the effects of swelling and inflammation. Cold therapy is really good for pain in your joints caused by a flare-up of arthritis. Muscle spasms can also benefit by having the cold increase your body's tolerance for pain.

There are some people who like cold rather than heat therapy to treat the pain of their arthritis. Others will recommend both, by alternating treatments. The best thing you can do is to try each one, and go with the type of therapy that you find the greatest relief from using.

For joint and muscle stiffness, you'll want to apply either ice or heat packs to the suffering area two times per day at a minimum, to get the greatest results of relieving your pain. Each session should last from five to ten minutes on the cold compress, but get to it within forty-eight hours of when you first feel the pain, for it to be the most effective in treating it. Heat can be applied during this 48 hour time period also, so that your muscles can be given a chance to relax. Then use heat for any pain and stiffness that goes beyond the initial 48 hours.

How to Freeze Cookies and Cookie Dough

"Can I freeze my homemade cookies/cookie dough?" is a question that gets asked a lot. Most cookies and cookie dough can be successfully frozen. However, there are a few exceptions.

Don't freeze cream filled cookies, meringues or cookie dough that contains whipped egg whites. The egg whites will break down in the freezer and compromise the cookies.

Counter Microwave

Most other cookies and cookie dough freeze well. I like to wrap baked cookies two at a time back-to-back, in plastic wrap and then place these little packages in a freezer safe bag. Alternatively you can layer your cookies in a a sturdy freezer safe container, separating the layers with wax paper or plastic wrap.

How to Freeze Cookies and Cookie Dough

Most of the time I freeze the dough instead of baked cookies, since I prefer the taste and aroma of freshly baked cookies. For convenience instead of freezing the dough as it is, I shape it into logs that can be sliced and baked or into individual balls of cookie dough.

For logs, place spoonfuls of dough onto wax or parchment paper. Form into a log shape that is about 10 inches long and 1 1/2 to 2 inches in diameter, wrap it tightly, twisting the ends as you would a hard candy wrapper. Then place it in a plastic freezer bag and transfer it to the freezer. To insure the log maintains it's shape and doesn't flatten out on one side, you can remove it from the freezer after it has been in there for about a 30 minutes and re-roll it on the counter, smoothing out the flat side that may have developed and then return it to the freezer.

For individual cookies, form the dough into desired size balls and freeze until solid. Once frozen, drop them into a freezer safe bag and place in the freezer or double wrap them for added protection.

Remember to label your freezer bags/containers with the kind of cookies/dough and date. Cookies and cookie dough will lose their freshness over time so it's best to use them within 3 months.

When you are ready to bake cookies, remove your dough from the freezer. The balls of dough can be baked from their frozen state but may need an extra minute or two in the oven. Logs should be defrosted until they are soft enough to slice and then baked. Frozen cookies can be defrosted on the counter or in the microwave if you're in a hurry.

It's great being prepared with cookies or cookie dough in the freezer when a craving for homemade cookies strikes.

Sometimes life has a way of putting some seemingly insurmountable physical challenges in your path, especially if you are in a wheelchair. I like to think of myself as a problem solver, able to sometimes "outsmart" the problem by thinking outside of the box. A time when I had to use this "I can do this" mindset was an Easter dinner several years ago.

Easter was two days away and the whole family was coming for dinner. If I was going to get the ham thawed in time, I needed to get it out of the freezer and into the refrigerator. I decided I could get the ham on the counter and I would ask my daughter to put it in the refrigerator when she visited that evening. Good plan; the only thing is my daughter came and went and the ham never crossed my mind. Now I had a real dilemma. The ham could not sit out all night and I was not expecting other guests that evening. Every time I tried to lift the ham from my lap to the refrigerator shelf, it would drop. Now it was time for some creative problem solving. To overcome this obstacle, I created a transfer board out of a cookie sheet. I put one end of the board on my lap and one end on the shelf. All I needed to do was slide the ham up the cookie sheet to the shelf. Voila! Sometimes we just have to go about things in a different way to accomplish the task.

TIPS TO INCREASE SAFETY AND INDEPENDENCE IN THE KITCHEN

MS has forced some of us to deal with issues of limited strength and dexterity, poor vision or balance, or lapses in memory. Any and all of these problems can make it difficult and unsafe to accomplish tasks that are necessary in the kitchen. In most cases, the longer someone can be safely independent, the happier they will be.

How families can help:
Think ready to grab, heat and eat. If some Good Samaritan fixes a large quantity of something, have it stored in the freezer in individual serving containers. Then, it can be microwaved and eaten from the same container. microwave diner plates with covers allow you to make a plate with multiple items and then freeze it. This would be a way for a family member to offer help. Just save a serving of each dish from a meal created for members of your household. Then, when ready to eat, it just has to be thawed and microwaved. Use non-breakable containers instead of glass. Opt for small containers that hold one serving and can go from freezer to microwave. Deep walled dishes also provide sides to help scoop food onto an eating utensil. Freeze bread, bagels and English muffins to keep them from getting stale. In this way, you can take out one serving at a time. Make sure the bagels and muffins are sliced before freezing. People with poor sensation in their finger tips find it difficult to use storage bags that require you to line-up two tracks and press them together. Closing bags with twist ties or plastic clips, likewise, can be frustrating. I have everything transferred to zipper type storage bags.
Modifications to make food preparation easier:
Induction Cooktop - Because of the physical problems encounter with MS, being around an open heat source poses the risk of burns. An Induction Cooktop uses magnetic waves to cause the coils in the bottom of a pot or pan to heat. The cooktop itself remains cool and accidentally touching the cookplate will not cause burns to the skin. My research leads me to believe a Pacemaker can be affected by these microwaves, so you need to use caution if the person coming in contact with it has this heart aid. Counter-top microwave - Many homes have a microwave over the stove which can be difficult to use and unsafe for a person with limited strength. A counter-top microwave allows the user to more easily transfer hot dishes to the counter. Smaller, individual serving bakeware make the weight more manageable. Since the bottom of the container gets hot, I keep a pie or cake pan handy and just slip dishes onto the pan. Make sure you keep items level in the transfer process Convection Oven - A hot, open oven door is an accident waiting to happen for someone with poor balance; or it can be a hazard when someone with limited strength tries to lift a hot baking dish out of the oven. A counter-top-convection oven, which is about the size of a regular toaster oven, allows food to be transferred much easier to the counter. Instead of heating food from the bottom, a convection oven uses a built-in fan to circulate hot air evenly through the cooking area. I find my convection oven does a very good job of baking without burning and operating it is not difficult to learn. Basic convection ovens, without all the bells and whistles, cost between 0 and 0. Electric Frying Pan - Electric frying pans allow you to cook away from the stove and even permit the cook to sit at a table. The problem with the regular size appliances is that they are heavy and large enough to cook for a group of people. The pan I am suggesting is only 7" X 7 " and lightweight enough that it is easy to carry to the sink for washing. An added desirable feature is that it is the perfect size to prepare a meal for one or two small eaters. Pull-out-shelves - Objects in the back of lower, cavernous, kitchen cabins can be difficult to reach and are often forgotten. Pull-out-shelves may be a problem solver to help make this area more accessible. These shelves can be found in large, local hardware stores, and someone with some carpentry skills can usually install them. Dycem Mat - A stroke or other health problem may leave a person with only one useful hand, without the additional hand to stabilize things. The Dycem Mat is a vinyl mat used to eliminate slipping and sliding problems on shelves, work surfaces, under plates or cups; or it can be used to provide an improved grip on handles, cutlery, arm rests, walkers, wheelchair seats, trays or footrests. PenFriend - Someone who is visually impaired may have difficulty distinguishing between foods, medications, ingredients or other products with small writing on their labels. The PenFriend works by placing a label on an item and an identifying message is recorded into the pen. When the tip of the pen is touched to the label, the message is spoken. There is another assistive product I really prize and that is motorized blinds. Before I had automated blinds, if I wanted privacy at night, I would have to leave blinds closed all the time. My home was always a very dark and gloomy place. Being so cut off from the world, I sometimes did not even know what the weather was like outside. I could stand to adjust the controls but, because furniture was sometimes in my way, this was a fruitless endeavor. With motorized blinds, I just point and click and I have sunlight. These were expensive, so I selectively placed them in areas that were unreachable. For windows that I can reach the controls, I use blinds that are operated with a cord rather than a wand. Because of the physical limitations created by MS, the motion of turning a wand can be difficult for many people. When you see a person sitting in the dark, before making a quick judgment, it might be prudent to consider... which came first, the darkness or the depression?

I have discussed tips to increase independence but do not want to leave out one very important safety tip - an emergency alert button. While achieving independence, it is crucial you can call for help in the event of a fall or in another emergency. Call buttons worn on the wrist can be inaccessible if the hand that will push the button is pinned under you or in some other way inoperable. A pendant is accessible to both hands. Pin the pendant to the front of pajamas at night to keep it readily available but prevent it from flopping around. Check with your local Cancer Society, hospice, or other similar organization for recommendations in your area.

By putting a few modifications in place, you can roll away barriers preventing independence. Maybe you cannot do things the way you used to but, by changing your approach to the task, it is still achievable. Start thinking, "I can do this. I just need to figure out how".

When you cook a steak you probably pan fry or grill it, but did you know that it is possible to bake a steak? Actually, baked steak is a really easy dish to make and it always comes out well. If you learn some steak baking tips, you can be assured of a perfectly prepared dish, which your family will enjoy.

The first thing to do if you want to learn how to bake a steak is to choose the right cut of meat. A very small steak will cook too quickly so choose something weighing between twelve and sixteen ounces and between one and a quarter and one and a half inches thick.

How to Bake a Steak

Before you bake the steak, you will want to think about marinated steak recipes. Take the steak out of the refrigerator at least thirty minutes before you want to start cooking it. Combine some soy sauce, olive oil, and steak seasoning for a basic flank steak marinade or choose from any one of many other steak marinade recipes.

Marinate your steak for at least half an hour before you cook it so the flavor of the steak marinade recipe can soak into the meat. If you want to marinate your steak for longer than half an hour, and this is an option if you want your marinade to work as a tenderizer and if you are using a tough cut of meat, and then marinate it in the refrigerator rather than on the counter top, for food safety reasons.

Cooking the Steak

Heat up a skillet and the oven. You can either bake steak for about twelve minutes at 450 degrees F or about double that time at 325 degrees F. It is usually preferable to cook the meat for a longer time at a lower temperature, so choose the lower temperature unless you are in a rush. The meat will be juicer and more evenly cooked.

For a grilled taste, you will need to sear the marinated steaks in a skillet before baking them. Brown the meat in some butter in a skillet over a moderate heat for a couple of minutes per side. Searing the meat is not compulsory but a browned steak looks much nicer and searing it also helps to lock in the juices so this step is recommended.

Next, transfer the browned meat into the preheated oven and cook it until it is done how you like it. If your skillet is not ovenproof, you will need to use an ovenproof dish. Let the steak cook, then take the cooked meat out of the oven using an oven mitt and let it stand for five or ten minutes, so the juices can redistribute. This makes the steak extra juicy.

Serve your baked steak with a steak sauce, plus some French fries or mashed potatoes. Vegetables or salad also go nicely with a baked steak dish.

In my previous article, I discussed kitchen gadgets. While there are many choices for gadgets, there are also endless options for small appliances. The difference with the appliance section of that wonderful kitchen store is the price tags can get pretty hefty.

Let's use the same criteria of money and space constraints, but another point to seriously consider with these purchases is if they are "one hit wonders". Will you really get your money's worth or will it end up at the garage sale or the give-away pile? We've all made those mistakes, so maybe I can save you some money and frustration.

Toaster: To me, an absolute necessity. Two or four slice depends on your family size, but wide slots are important. Are bagels a daily routine? Look for a temp control for bagels and English muffins. Throw in a set of bamboo toast tongs to save your fingers. Remember, cheap doesn't always save you money, especially if the toast is bad. Food Processor: The food processor can be a workhorse in your kitchen. It can be the bread mixer, the blender for the margaritas, and slice and dice those veggies. I cook regularly and invested in a good food processor that is now 14 years old and works like new. Waffle Iron: There really isn't a substitute for a good waffle iron. Toaster waffles taste like cardboard to me. Plain or Belgium - your call. So, if you are a waffle lover, this is a great appliance. While you are cooking, make enough waffles to freeze for future breakfasts. You know what you are eating with homemade. Crock Pot:. They have outlasted their fad reputation. Mine has saved my life more often than you would believe. Crock pots are useful for any sized family. Be sure the crockery liner is removable for cleaning ease. Multiple heat levels are a real plus. My favorite has a digital display that allows me to select the cooking time and holds at a keep warm temp. Coffee Maker: This is a very personal decision - you can go from basic to espresso to one cup filters to who knows what else. What I care about is that it makes a good cup of coffee, is well-manufactured, and is easy to clean. Remember the beans and the brewer contribute to that cup also! microwave: If you don't have a built-in microwave, seriously consider a counter-top. They are compact, efficient, cost effective, and a huge time saver.

Whole Grains: Easy Cooking Instructions

Whole grains are easy to cook on the stovetop (as you would cook rice or pasta), or in a countertop steamer. I always cook one pound (2½ cups) of whole grains at a time (as much as my steamer will hold), since they keep well -- refrigerated or frozen. Leftovers can be reheated in a microwave or used in salads. I make my own "instant grains" by packaging ½-1 cup portions in baggies and storing them in the freezer. They take a minute or less to thaw in the microwave.

The first time you cook a new grain, check them 5-10 minutes before the end of the cooking time to make sure they are not getting mushy. If they aren't tender enough to suit you at the end of the recommended time, cook a little longer. You do not need to rinse or pre-soak whole grains.

Cook grains in bouillon or other flavored liquid; 1 cup bouillon = 1 cup water + 1 bouillon cube or 1 teaspoon bouillon granules, or 1 cup of any other flavored liquid of your choice. If you don't use bouillon that contains salt, be sure to add a little salt to the cooking liquid. Whole grains cooked without salt taste hopelessly flat. Vegetable or chicken flavored bouillon yields neutral-flavored grains that can be used for anything - breakfast cereal, main dishes, salads or desserts.

Whole Grains: Easy Cooking Instructions

Cooking whole grains in an electric countertop steamer: If you are serious about healthful eating, I recommend that you invest one of these inexpensive, handy appliances. This is by far the easiest, most convenient way to cook all of the whole grains. Mine is a Black and Decker brand, with an 8-cup capacity rice bucket and 75-minute timer. Countertop steamers come with instruction booklets with detailed information on cooking vegetables and seafood. Follow these instructions for cooking whole grains, using the times and amounts shown in the chart.

Fill the steamer base with water to the top line. (Do not use the drip tray.) Place the steamer basket on the base. Place 1 pound of grains and 4 cups of bouillon in the rice bowl and set the rice bowl in the steamer basket. Cover, plug in, and set the timer for 75 minutes. When the timer rings, let the grains sit until cool OR remove the cover carefully to avoid steam burns. Drain the grains in a colander if there is excess liquid. Note: I let the grains sit for at least 20-30 minutes after the timer rings before removing the lid.

On the stovetop: Any of the whole grains can be cooked in a pot just as you would cook white rice, but they take longer and will use more liquid. This is my least favorite method because you have to stand around and watch the pot. After you've done this once or twice, you'll want to go out and get your countertop steamer.

Use a medium-size pot with a tight-fitting lid. Bring six cups of bouillon to a boil in the pot, stir in a pound of the grains (2 1/2 cups) and return to boiling. Reduce the heat to low, cover the pot and simmer until the grains are tender and most of the water is absorbed, usually 45-60 minutes.

You can add raw grains to soups or stews while they cook. My only concern is getting everything done at the same time without overcooking any of the ingredients. Some of my recipes use this method, but most recommend cooking the grains separately. Do whatever seems easiest for you.

Other appliances can be used to cook whole grains; try what you have on hand:
Rice cooker: if you have a rice cooker with a metal container and no timer, you may be able to use it to cook your whole grains, but you will need to experiment. These cookers use a sensor to determine when the liquid has been absorbed.
Crockpot: Put grains and liquid in the crockpot or slow cooker, turn it on and leave it for 6-8 hours.
microwave: you can cook whole grains in one of the plastic rice steamers specifically designed for microwave use, but I haven't been too pleased with the results. You don't save much time, and you have to stick around to change the power setting and stir midway through the cooking process.
Pressure cooker: If you're comfortable using a pressure cooker, they work just fine for whole grains. Adjust the cooking times as you would for any other food (usually about half the regular time.)

Here is the recipe: Chocolate Pecan Pie 1 pkg of 8 squares of Baker's semi-sweet chocolate 1 refrigerated pie crust 2 tbsp butter or margarine 3 eggs lightly beaten 1/4 cup firmly packed light brown sugar 1 cup of KARO light or dark corn syrup 1 tsp. vanilla 1.5 cups pecan halves or walnut halves heat oven to 350 degrees F. Coarsely chop 4 squares of the chocolate and set aside. Line a 9 inch pie plate with your pie crust or use a premade. Microwave remaining 4 squares of chocolate and butter until butter is melted. stir until chocolate is completely smooth. Brush pie crust with small amount of beaten eggs. Stir sugar, corn syrup, eggs and vanilla into chocolate mixture until blended. Stir in pecans and chopped chocolate pieces. Pour into pie crust. Bake 55 minutes or until knife inserted 2 inches from edge comes out clean. Cool for a minimum of 2 hours. Serves 8 people.

Knowing what type of microwave oven you require for your kitchen is dependant on how much you intend to use it and what you are going to use it for. The Nuwave Oven is a counter top oven that uses infrared technology to cook the food. I saw the ad on TV so many times that I stopped paying attention to it. It wasn't until recently that I noticed the line where it said that the oven cooked food in half the time it takes a normal oven. Not the fastest time possible but I wanted to try out some more home cooked meals instead of home nuked meals from the microwave. It seem to be a reasonable compromise. Food that isn't nuked to weird tastes but still fast enough so that I don't forget that I was hungry and had something cooking.

The whole thing is reasonably light for a counter top oven. It takes up little space in the kitchen considering that you can cook a whole chicken in it. The first thing I looked at was the how fast it cooked. Well the claims were right. It really does take 50% off from your cooking time. This is due to the deep penetrating nature of the infrared waves compared to your regular heat and compounded effect of the pressure exerted by the tight sealing cover on the oven. However, speed will be for naught if the food comes out bad. Fortunately, it didn't. In fact, it had the home cooked taste to it, right down to the moist, juicy taste. (By the way, it you plan on cooking food that should come out crisp, use something else. The whole moisture locking technology does not do too well with crispiness.) It really backs up the claims on the advertisement.

The Nuwave over is great when you want home cooked food fast. I heartily recommend it for those healthy eaters who are on the go. It is a bit limited in terms of the serving you can cook at one time so don't rely too much on it for large gatherings. Overall, a great addition to any kitchen.

Yet, you can fit quite a few cans and goodies in such a kitchen cabinet pantry.

One thing you have to watch out for with roll-out pantries is that things are squeezed in pretty tight. You might have cookies and chips in with cans and bottles. This can damage the more delicate goodies. Try putting the softer or crunchier items on the top shelf with the cans on the lower, or lower two shelves of your roll-out kitchen counter pantry. If that does not work, use plastic containers for the crushable items.

There is a large kitchen cabinet pantry available if you want one, or a small one if that is what you need. If you want an in-between size, there are plenty of those as well. Finding a place for food storage is essential. After all, you cannot put everything in the refrigerator.

Home Remedies for Soothing That Sore Throat

A sore throat can sometimes feel as though someone is holding a match at the back of your throat. The burning sensation seems to spread throughout your entire head. It can be caused by any number of things including a cold, a viral infection, dry air, smoking, or even yelling. Other than over the counter throat lozenges and cough drops, the options are limited as far as medications that you can purchase to relieve throat pain. There are, however, several home remedies that many people have found useful for a sore throat:

One of the oldest sore throat remedies that seems to work the best is to gargle with warm salt water. Add the juice of one lemon and a tablespoon or two of honey to an 8oz. glass of hot water. Warm lemon and honey are great for soothing a rough or sore throat. Simmer chives and scallions in water for 5 minutes. Drink this as a tea for a sore throat. Cover one half of a lemon with salt and pepper and press with a knife or the back of a spoon so that the salt and pepper absorbs into the lemon. Warm the lemon either in the oven or in the microwave. Do not overheat. When it is warm, slowly lick the lemon, squeezing it at the same time until there is no more juice. Repeat this 2 to 3 times daily. Add 1 teaspoon of apple cider vinegar, a pinch of cayenne pepper, 1/4 cup lemon juice, and honey to a of hot water. Drink four times a day. Boil 1 or 2 teaspoons of dried chamomile blossoms to one pint of water, steep and then drink a cup every few hours to help to eliminate the pain of a sore throat. Add five drops of grapefruit seed extract to a glass of water and gargle with it. Grapefruit seed extract has powerful antimicrobial properties and is therefore an excellent antiseptic. Mix one tablespoon of ground mustard seed, the juice of one half of a lemon, one tablespoon of salt, one tablespoon of clear honey, and 1 1/4 cups of boiling water. Allow the mixture to stand for 15 minutes and then gargle with it. Add some pomegranate rinds to some water and bring to the boil. Drink it as a tea. It is highly effective, as pomegranate contains astringents. Add two tablespoons of fenugreek seeds to one liter of water and simmer over low heat for half an hour. Cool to room temperature, strain the mixture, and gargle with the strained liquid.

These are just a few of the home remedies that people having been using for many years to soothe their sore throats. Relief does not have to come in a bottle or pill. Natural, home remedies are safe and many people find them to be just as effective as any of the over-the-counter medications, if not more. In 1976, the Soviet Union banned the microwave oven declaring it a health risk and causing panic across the world. Since then numerous articles have circulated both on the internet and in print arguing the pitfalls and virtues of the humble microwave.

Since the microwave was indeed an invention by accident, its real use was aboard British military radar equipment in World War II, it is no surprise that many people are loathe toacknowledge it as a safe and efficient method of cooking. In fact many believers in natural and pure cooking will not eat anything that is heated or cooked in a microwave and will not purchase one at all.

While it is true that microwaves do generate electromagnetic waves and radiation, these are is no conclusive proof that these are damaging to humans in any way. Based on the number of years that microwave ovens have been on the market and the number of studies conducted, it is logical to conclude if these devices truly were harmful to us, the government of several countries including our own would have banned them by now.

In fact the radiation levels of all commercially produced microwaves are non-ionizing, hence are not associated with traditional cancer risks, and the exposure rate is considered far below what is harmful to human health. As is it impossible to stick your head into a microwave and cook it or in fact cook at all with the microwave door open, you are unlikely to be directly affected by the radiation generated.

While it cannot be argued that microwave cooking is perhaps the least nutritious way of preparing meals, it does not however cause cancer or any other diseases associated with harmful radiation. Cooking with a microwave has found to decrease the amount of cancer causing carcinogenic tar in meat and other foods normally cooked in an oven or grill. However, since the temperatures that microwaves cook at are lower than ovens and stoves, there is a chance that bacteria in the food may not be completely killed which may lead to food poisoning or other sicknesses.

It is advisable to avoid putting any metal substances in your microwave while cooking as this can cause your food to become less nutritious or even slightly toxic.
